Easy Slow Cooker Oats

Ok, so I was this years old when I discovered Slow Cooker Oats! I literally had no idea that was even a thing. But once you know better you start doing better, am I right?

With the months cooling down while the schedules are ramping up, you know I am all for things EASY. So when looking for easy breakfast ideas I came across a few variations of overnight oats. One thing led to another and boom! I was down a rabbit-hole of Slow Cooker Oat combinations.

Slow Cooker Oats is really no different than regular oatmeal or even overnight oats. The beauty however lies in the fact that you can put it on the night before and wake up to a hearty warm meal. Those are the type of mornings I love, waking up to something warm and filling, especially in these upcoming cold months.

Before we get into this recipe, a few notes: 1). Use STEEL CUT OATS. I can not stress that enough, anything but STEEL CUT will be mushy. Unless that texture is your thing. 2).This is my recipe doubled providing 12 servings depending on portion size. 3). Doubling the recipe prevents burning AND you can totally freeze the leftovers in individual portions. 4). YES! You can freeze oatmeal!! I freeze leftovers in 1 cup amounts. 5). Microwave frozen portion for 2-3 min and top with fresh or dried fruit.

Oats for the Win!
  • 2 cups steel cut oats
  • 2 medium/large apples peeled and chopped
  • 3 1/2 cups water
  • 4 cups non-dairy milk
  • 2 tablespoons white sugar
  • 2 tablespoons brown sugar
  • 1/2 cup dried cranberries
  • 1/2 cup dried cherries
  • 4 tablespoons butter
  • 2 tablespoons ground cinnamon
  • 2 teaspoons vanilla extract

Put all of the ingredients in the slow cooker and stir to help the sugar melt. Cover and cook on low setting for 7 hrs. Can serve with some additional dry or fresh fruit and I add the tiniest drizzle of maple syrup. That’s it.

The important thing to remember is you can totally make it your own, we arent re-inventing the wheel here but we can definitely customize to our liking by playing with ingredients!
